This is the time of the year that we rely heavily on family favourite recipes, batch cooking, and meal planning. When I’m feeling burned out on making meals or food prep or the season, I look for inspiration and old favourites. Today I’m sharing 3 cookbooks that make me want to cook and 3 recipes that we rely on for quick and easy-ish dinners.
Sometimes inspiration is everything and these 3 cookbooks are very different but inspiring and motivating, especially in May when I’m pretty unmotivated to cook.
Magnolia Table, Volume 3, Joanna Gaines: This just came out this week but I have Mongolian Beef, Italian Pasta Salad, and Spinach Manicotti marked for weekend cooking. Yum!
Love & Lemons Simple Feel Good Food, Jeanine Donofrio: This cookbook is another new one and it includes 125 Plant-Focused Meals that are also perfect for making ahead. Make ahead options get me to put a cookbook in my shopping cart – I love having the option. Love the Guide to Grain Bowls and delicious salad dressings – perfect for lighter spring and summer fare.
Meal Prep Magic, Catherine McCord: Have you heard of Weelicious? This is her meal prep cookbook and it’s EXTENSIVE. It includes everything from what to stock, kitchen clean up as well as delicious recipes and how to prep them. The Grilled Pork Tenderloin, Egg Sandwiches, and Chocolate and Cherry Baked Oats are on the menu for this week.
Greek Chicken Meatballs, via All the Healthy Things
If you’re not a cookbook person or aren’t inspired by a good cookbook, you might just need a simple recipe to get you in the kitchen. Here are two that we make on rotation and one that I made last night that we’re having leftovers from tonight and I am legit excited for them. Another bonus of these recipes is that they are all one-dish meals. A must for busy seasons!
15-Minute Egg Roll in a Bowl, Pinch of Yum: This is a family favourite and my youngest’s absolute favourite. It’s a one-dish meal, makes enough for a couple lunches the next day and really does take just 15 minutes to make.
Greek Chicken Meatballs, All the Healthy Things: This is such a good recipe. Baking them was a timesaver for me and then I made them as a salad ‘bowl’ and took the store-bought tzatziki shortcut. A must-try, especially if you love Greek food like we do.
Instant Pot Salsa Chicken with Cilantro-Lime Crema, Real Food Dietitians: This was delicious and I didn’t make the crema – we had sour cream and cilantro as toppings but the crema was just another step that I didn’t want to take on a weeknight. So good!
